Not so great for backpacking, but good for other purposes
I have mixed feelings about this product. I intended for these to replace freeze-dried breakfast for backpacking, but I feel they failed that objective. After you mix them with water, you still have to cook them, and that requires a skillet, which I normally don't carry. You need some way to plate them, unless you plan to eat them out of the skillet (nothing else to cook?). Some have suggested they can be cooked inside a bag in boiling water, but again more stuff to bring, more complicated. No matter what, there's all this extra stuff you're getting dirty. They are unseasoned, so you have to have salt and pepper. Overall, the freeze dried pouch breakfast seems simpler and less stuff to carry, though those are more expensive.
I can see other uses for them, so I still think it's a good product. I think they would be a great emergency food supply, or just backup in case you run out of eggs. They could be very good for car camping, though you would need to plan appropriately. They could be good for backpacking if you had a group, and/or to save some money.

These things are great! I wanted to try them out before my last hike. I followed the direction to the letter (which, if you know me, is how I live my life pretty much) and the final product was amazing. Unless you are a foodie or a food snob, which I decidedly am not, you will love these. The first time I made these egg crystals, I did not add anything and it tasted like a good, plain omelet. The second third and fourth time I whipped these babies up, I added a slice or two of cheese and had a great cheese omelet. They really do taste just like real eggs, which, in fact, they are. Get these; you won't be sorry.

As good as fresh Eggs
Our kayaking crew is constantly trying new food products for our various long distance treks and these eggs have just rocketed to the top of the "Must Take" list. We have tried a few different brands of powdered eggs and have learned to keep the Tabasco close at hand; but these eggs are simply amazing in both taste and texture. Mix in a few diced peppers, bac-Os,and a bit of shredded cheddar and you absolutely cannot tell the difference between these eggs and the real thing. Two of these packets fed 9 hungry young men who had grown tired of their every morning oatmeal. They provided a real breakfast feast halfway through our six day trip.
As a note of caution, one of our packets was missing the little measuring scoop that comes inside, so make sure you feel it through the packet before opening. You need it to get the right measure of water to powder.

Beware of shorter expiration date
I rate the taste at five stars and the texture at three stars. I'm thinking of trying to use milk instead of water.
I bought two #10 cans (6 pack per can, total of $70 then, $135 now with shipping) of these eggs in March 2013 and the expiration date is October 2020. Seven years shelf life.
I got these 12 individual packs August 2017 and their expiration date is January 2020!

Shocked by the great taste!
I had heard horror stories of the way powdered eggs tasted. But, based on the reviews, I ordered some to try. We did a blind taste test of THIS product in our family of six. We scrambled the powdered whole eggs in a separate pan from the scrambled regular eggs. Much to my surprise, no one noticed any difference! We have since used them in baking (wow! what convenience!) with the same results. I cannot recommend this product highly enough!!! Good to put into your pantry if you run out of eggs; good to put in storage for emergencies. I find it a little pricey but am very pleased to pay the price for a superior product. I came online to order more and am leaving this review...

Excellent For Canoe Camping
Took these eggs on a 5 day canoe camping trip and they served their purpose. However, I can't agree that they taste exactly like fresh eggs like so many others claim. They are impressively close but are a bit "cardboardy". That being said, they exceeded my expectations and will be a staple going forward on all my camping trips. Note: The key to these eggs is to hit the water requirement on the mark. By the third day we had it down but before then we did have a bit of a runny breakfast.

Great for light weight back-packing breakfasts!
Bought these for back-packing trips, and was really happy. I portioned them out into daily servings, which made them a breeze to prep in the mornings. I only used them for scrambled eggs, but for those they worked fantastic! The water blended in easily using a fork, and they weren't lumpy or runny. Of course nothing can beat fresh eggs, but for back-packing, I found these great, especially with the addition of some freeze dried cheese! These will definitely be part of our back-packing pantry from now on, and I'm really glad I found them!

These are not your everyday "powdered" eggs! These are egg crystals, and are the real deal. When they are reconstituted with water, they look and taste like real eggs because they are real eggs. There are an equivalent of a dozen eggs in ea bag and they taste wonderful. There is no need to ever take real eggs with us camping ever again! We can just grab 1-2 bags and throw it in with our stuff and we don't have to worry about breaking any eggs, no ice, nor a special egg carrier. They are also great to have in your pantry for back up for that just in case moment, or for that SHTF moment! Well worth the cost! We are definitely getting more!

I have tried my best to dehydrate my own eggs with little success. I find the texture is off on my homemade attempts. These eggs are amazing! They really do cook like fresh eggs and taste like fresh eggs! They scramble up nicely after adding the required water and no rehydration is needed... just add water, stir, and cook. The texture is just like fresh eggs. These have become a staple in my camping and backpacking menu. I wouldn't hesitate trying them if you are on the fence...... there is nothing like tasty, fluffy eggs when on the trail!!!!

Tastes like real eggs
I bought these to carry backpacking but decided to try them in my home kitchen first. I followed the mixing directions (simply 2 part egg, 3 part cold water, whisk), then I poured them in a pan with salt and pepper. Done. Real scrambled eggs that tasted like fresh scrambled eggs. If you want a whole fried egg, you're still gonna need a fresh egg, but if you're OK with scrambled, or need eggs for cooking or baking, these will do nicely.
